Can You Eat White Chicken Chili on the Keto Diet?
White chicken chili is keto. With only 4.3 net carbs in this chicken chili recipe, it can be enjoyed at any time.
White chili may classically be made with corn and beans, however, this recipe is beanless and cornless. I did make this version with curry, but you can easily omit that spice and enjoy it without it.
Is Chili Bad for the Keto diet?
If the chili recipe, like this one, is made without beans or corn and other high carb vegetables, it is not bad for the keto diet.
In fact, I have another keto chili made without any vegetables other than a small onion.
Keto White Chicken Chili with Cauliflower
Riced or chopped cauliflower would be amazing an amazing addition to this recipe.
For using riced cauliflower, you can either buy it frozen this way or use a cheese grater or even a food processor to get your cauliflower very fine. I would then add in the riced cauliflower near the end of the cooking time.
You can also use chopped cauliflower. Again this can be bought froze or you can chop it yourself. For the larger size pieces of the cauliflower, add them to the crockpot when you have everything else in there. This would be step 3 in the recipe.
Make the Keto White Chicken Chili Dairy Free
Making this white keto chili with no dairy is very easy. All you need to do is use coconut milk instead of heavy cream and sour cream. I would buy the coconut milk in a can. Make sure you check the nutrition that it does not contain any added sugar in the ingredients.
There are also other heavy cream and sour cream substitutes you can use to make this keto chili recipe dairy-free. My personal choice for sour cream is from the company Kite Hill. They also make cream cheeses and yogurts.
For a dairy-free replacement for heavy whipping cream, there are a lot of brands that make a nut milk version of creams. These would be found near the heavy cream in the grocery store.
Cooked in the Crockpot
This keto white chicken chili is made in the crockpot because it makes cooking it easier. You can put everything in there and not have to worry about the gas stove being on if you leave the house.
What Can I Use to Thicken White Chicken Chili?
To thicken keto soups, stews, and chili there are a few ingredients that you can use. These keto thickening agents are:
- Xanthan Gum
- Guar Gum
- Glucomannan (Konjac)
- Agar Agar
When you use these items, use very small amounts, such as ¼ teaspoon for the whole recipe. Some of these items, such as the konjac and agar agar will thicken the soup as the soup cools.
Take some liquid out of the crockpot and put it into a small bowl. Then add the thickening agent to the liquid you took out. Mix together. Once mixed fully, add back to the crockpot and mix in.
Another easy tip to thicken the keto chili is to just let it simmer to allow the extra liquid to evaporate.
Keto White Chicken Chili in Crockpot (Curry Optional)
This keto chicken chili is easy to make dairy free or even with added vegetables such as cauliflower. Made in the crockpot to make life simpler.
Ingredients
- 6 Chicken Thighs
- 4 C of water
- 1 can of Hunts Tomatoes flavored with basil, garlic, and oregano
- 130 grams of Onion diced
- 1/4 tsp Minced Garlic
- 1 tsp Avocado oil
- 1 Bell Pepper, about 100 g
- 1 T Curry Powder (optional)
- 1 tsp Chili Powder (add 2 more tsp if curry is omited)
- 1 C Heavy Whipping Cream
- 1 C Sour Cream
- 1 t Salt
Instructions
- Place the chicken thighs in a crock pot along with the water. Cook the thighs in the crock pot. I did this the day before I made the whole chili. After the chicken was done I put the crock pot with the chicken in the fridge. The next day, I took the skin and bones of the meat. You can also do this the same day. Keep everything else in the pot.
- Chop the onion and put in a pan with the oil on the stove. Saute the onions.
- Place everything but the sour cream and heavy whipping cream into the crock pot.
- Set the crock pot temperature to low. Cook everything for about an hour.
- Stir in the sour cream and heavy whipping cream. Cook for 10 minutes or so to bring the temperature up more. If you want a thicker chili, cook it longer to bring the water out.
