Ingredients

  • 1 tbsp coconut oil
  • 1 pack of riced cauliflower
  • 1 med size chicken thighs sliced
  • 1 hardboiled egg
  • 1 ginger julienned
  • scallions for garnish
  • 1 cup chicken broth
  • 2 tbsp fish sauce

Instructions

  • Saute the chicken in the oil until brown
  • Add ginger, fish sauce, cauliflower and broth.
  • Bring to a boil.
  • Depending on how you like your cauliflower either let it turn into a risotto/ congee like texture letting it boil for a couple more minutes
